I had a major craving for some krumkake, but lacked a couple ingredients so it had to wait till I got to the store again. I made sure to get the couple things I needed this week so I could make some. The ones pictured have sweetened whipped cream in them; you can also/alternately put fresh berries in them, or buttercream icing etc, dust them with powdered sugar… personally I prefer to just leave them flat and plain vs rolling and filling them in any manner. But I figured some filling would make for a prettier picture.
Krumkake are a type of Norwegian cookie, similar to the more commonly known Italian pizelle cookies. Depending on the recipe used they can be sturdy enough to be used as homemade ice cream cones, or very delicate, lacy cookies such as the ones pictured here. They can also be either sweet or savory. They are very simple to make and it only takes a few minutes to get the batter together. It does take a little time to bake them, as you have to bake and form (if you want them rolled up vs flat) one at a time – some krumake makers do make two at a time – but they are so very worth it!
